2 cups baby potatoes, halved

2 cups carrots, sliced into rounds

2 cups zucchini, sliced into half-moons

4 tablespoons olive oil

4 cloves garlic, minced

1 tablespoon fresh rosemary, chopped

1 tablespoon fresh thyme, chopped

1 teaspoon salt

½ teaspoon black pepper

Optional: Fresh parsley for garnish

Instructions
 

Preheat your oven to 425°F (220°C).

    In a large mixing bowl, combine the halved baby potatoes, sliced carrots, and zucchini.

      In a separate small bowl, mix together the olive oil, minced garlic, rosemary, thyme, salt, and black pepper.

        Pour the herb mixture over the vegetables and toss until they are well-coated.

          Spread the coated vegetables evenly on a large baking sheet lined with parchment paper for easy cleanup.

            Roast in the preheated oven for 25-30 minutes, or until the vegetables are golden brown and tender, stirring halfway through for even cooking.

              Once done, remove from the oven and let cool for a few minutes.

                Garnish with fresh parsley if desired before serving.
