For the Chicken Marinade:

500g boneless chicken thighs, cut into bite-sized pieces

200g plain yogurt

2 tablespoons lemon juice

2 tablespoons vegetable oil

2 teaspoons garam masala

1 teaspoon ground cumin

1 teaspoon ground coriander

1 teaspoon turmeric powder

1 teaspoon red chili powder (adjust to taste)

Salt, to taste

For the Masala Sauce:

3 tablespoons vegetable oil or ghee

1 medium onion, finely chopped

3 cloves garlic, minced

1-inch piece of ginger, grated

1-2 green chilies, slit (optional, for extra heat)

1 can (400g) crushed tomatoes

1 teaspoon ground cumin

1 teaspoon garam masala

1 teaspoon paprika

150ml heavy cream or coconut milk

Fresh cilantro, chopped, for garnish

Salt and pepper, to taste

Instructions
 

Marinate the Chicken: In a large mixing bowl, combine the yogurt, lemon juice, vegetable oil, garam masala, ground cumin, ground coriander, turmeric, red chili powder, and salt. Mix well and add the chicken pieces, ensuring they are fully coated. Cover and marinate for at least 1 hour, or overnight in the refrigerator for enhanced flavor.

    Cook the Chicken: Preheat your grill or a heavy skillet over medium-high heat. Cook the marinated chicken for about 5-7 minutes, until cooked through and slightly charred. Remove from heat and set aside.

      Prepare the Masala Sauce: In a large pan, heat the oil or ghee over medium heat. Add the chopped onion and sauté until golden brown, about 5-7 minutes. Stir in the minced garlic, grated ginger, and green chilies (if using); cook for another minute until fragrant.

        Add Spices and Tomatoes: Stir in the ground cumin, garam masala, and paprika; cook for 1-2 minutes. Then add the crushed tomatoes and bring to a simmer. Let it cook for 10-15 minutes, stirring occasionally, until the sauce thickens and deepens in color.

          Combine Chicken and Sauce: Add the grilled chicken pieces to the sauce and stir to combine. Pour in the heavy cream (or coconut milk) and mix well. Simmer for an additional 5 minutes, allowing the flavors to meld. Season with salt and pepper to taste.
