Ingredients
  

1 can (15 oz) chickpeas, drained and rinsed

1/4 cup tahini

2 cloves garlic, minced

1/4 cup fresh lemon juice (about 1 large lemon)

1/4 cup extra virgin olive oil

1/2 teaspoon ground cumin

Salt, to taste

Water, as needed for desired consistency

1/2 cup cherry tomatoes, halved

1/2 cucumber, diced

1/2 red onion, finely chopped

1/2 cup pitted Kalamata olives, halved

1/2 cup crumbled feta cheese

1 tablespoon fresh parsley, chopped (for garnish)

Extra olive oil, for drizzling

Instructions
 

In a food processor, combine the chickpeas, tahini, minced garlic, lemon juice, olive oil, ground cumin, and a pinch of salt.

    Blend until smooth, adding water a tablespoon at a time until you reach your desired hummus consistency. Taste and adjust seasoning if necessary.

      Transfer the hummus to a large serving dish and create a shallow well in the center.

        In a separate bowl, mix together the cherry tomatoes, cucumber, red onion, and Kalamata olives. Season lightly with salt and a drizzle of olive oil.

          Spoon the mixture evenly over the hummus, filling the well.

            Top the dish with crumbled feta cheese and sprinkle fresh parsley on top.

              Drizzle additional olive oil over everything for extra flavor.

                Serve with pita chips, fresh veggies, or warm pita bread for dipping.
