Grilled Nectarine Burrata Prosciutto Salad

Ingredients
  

2 ripe nectarines, halved and pitted

8 oz fresh burrata cheese

4 oz prosciutto, thinly sliced

2 cups arugula or mixed greens

¼ cup balsamic glaze

2 tablespoons olive oil

1 tablespoon honey

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

Salt and pepper, to taste

¼ cup toasted pine nuts (optional)

Instructions
 

Preheat your grill to medium-high heat.

    Brush the cut sides of the nectarines with olive oil and sprinkle lightly with salt.

      Place the nectarines cut-side down on the grill and grill for about 3-4 minutes, or until grill marks appear and they soften slightly. Turn them over and grill for an additional minute. Remove from the grill and set aside to cool slightly.

        In a large bowl, toss the arugula (or mixed greens) with olive oil, honey, thyme, salt, and pepper to taste.

          Tear the burrata into large, uneven pieces and arrange over the dressed greens.

            Add the prosciutto, placing it gently around the salad.

              Cut the grilled nectarines into wedges and arrange them on top of the salad.

                Drizzle lightly with balsamic glaze and top with toasted pine nuts if using.

                  Serve immediately and enjoy!
