Grilled Zucchini Greek Salad

Ingredients
  

2 medium zucchinis, sliced into 1/2-inch thick rounds

1 tablespoon olive oil

Salt and pepper to taste

1 cup cherry tomatoes, halved

1 cucumber, diced

1 red bell pepper, diced

1/2 red onion, thinly sliced

1/2 cup Kalamata olives, pitted and sliced

1/2 cup feta cheese, crumbled

2 tablespoons fresh parsley, chopped

2 tablespoons red wine vinegar

1 tablespoon fresh lemon juice

1 teaspoon dried oregano

Instructions
 

Preheat your grill to medium-high heat.

    In a bowl, toss the zucchini slices with olive oil, salt, and pepper until evenly coated.

      Grill the zucchini for about 3-4 minutes on each side or until grill marks appear and the zucchini is tender. Remove from the grill and let cool slightly.

        Meanwhile, in a large salad bowl, combine the cherry tomatoes, cucumber, red bell pepper, red onion, Kalamata olives, and feta cheese.

          Cut the grilled zucchini into bite-sized pieces and add to the salad bowl.

            In a small jar or bowl, whisk together the red wine vinegar, lemon juice, dried oregano, and a pinch of salt and pepper.

              Drizzle the dressing over the salad and toss gently to combine all the ingredients.

                Garnish with fresh parsley and serve immediately, or refrigerate for 30 minutes to allow the flavors to meld.
