Ground Turkey Sweet Potato Casserole

This one-pan wonder combines ground turkey, sweet potatoes, colorful bell peppers, and black beans, all enhanced with delicious spices. Topped with gooey cheddar cheese and baked to perfection, it’s comfort food that everyone will love. Easy to make and full of flavor, it’s a great weeknight dinner option!

Ingredients
  

1 lb ground turkey

2 medium sweet potatoes, peeled and diced

1 medium onion, chopped

2 cloves garlic, minced

1 cup diced bell peppers (any color)

1 cup corn (fresh, frozen, or canned)

1 cup black beans, rinsed and drained

1 teaspoon cumin

1 teaspoon smoked paprika

1/2 teaspoon chili powder

Salt and pepper to taste

1 cup shredded cheddar cheese

1 tablespoon olive oil

1/2 cup chicken or vegetable broth

Fresh cilantro for garnish (optional)

Instructions
 

Preheat your oven to 375°F (190°C).

    In a large skillet, heat the olive oil over medium heat. Add the chopped onion and bell peppers, and sauté until softened, about 5-7 minutes.

      Add the minced garlic and ground turkey to the skillet. Cook until the turkey is browned and fully cooked, breaking it apart with a spoon, about 8-10 minutes.

        Stir in the diced sweet potatoes, corn, black beans, cumin, smoked paprika, chili powder, salt, and pepper. Mix well.

          Pour in the chicken or vegetable broth and cover the skillet. Let it simmer for about 10-12 minutes, or until the sweet potatoes are tender.

            Once the sweet potatoes are cooked, transfer the mixture into a greased 9x13 inch baking dish. Spread evenly.

              Sprinkle the shredded cheddar cheese over the top of the casserole.

                Bake uncovered in the preheated oven for about 20-25 minutes, or until the cheese is bubbly and golden.

                  Once cooked, remove from the oven and let it cool slightly. Garnish with fresh cilantro if desired.

                    Serve warm and enjoy your delicious Ground Turkey & Sweet Potato Casserole!
