Ground Turkey Sweet Potato Skillet

1 pound ground turkey

2 medium sweet potatoes, diced

1 red bell pepper, diced

1 yellow onion, chopped

3 cloves garlic, minced

1 teaspoon smoked paprika

½ teaspoon cumin

½ teaspoon chili powder

Salt and pepper to taste

2 tablespoons olive oil

1 cup spinach (fresh or frozen)

¼ cup chicken or vegetable broth

1 tablespoon fresh cilantro, chopped (optional for garnish)

Instructions
 

Prepare the Sweet Potatoes: Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the diced sweet potatoes and season with salt and pepper. Cook for about 10-12 minutes, stirring occasionally, until they are tender and slightly caramelized.

    Cook the Turkey: Push the sweet potatoes to one side of the skillet and add the remaining tablespoon of olive oil to the other side. Add the chopped onion and red bell pepper, cooking for 4-5 minutes until softened. Then, add the minced garlic and cook for another minute until fragrant.

      Combine Ingredients: Add the ground turkey to the skillet, breaking it apart with a spatula. Stir in the smoked paprika, cumin, chili powder, and more salt and pepper to taste. Cook for about 6-8 minutes, until the turkey is fully cooked through.

        Add Spinach and Broth: Pour in the chicken or vegetable broth and stir in the spinach. Cook for an additional 3-4 minutes, allowing the spinach to wilt and the flavors to meld together.

          Serve: Remove from heat and garnish with fresh cilantro if desired. Serve warm straight from the skillet for a hearty and nutritious meal.
