1 lb ground turkey

2 medium sweet potatoes, peeled and diced into small cubes

1 red bell pepper, diced

1 small onion, finely chopped

2 cloves garlic, minced

1 tsp ground cumin

1 tsp smoked paprika

½ tsp chili powder

Salt and pepper to taste

2 tablespoons olive oil

1 cup spinach or kale, roughly chopped

¼ cup fresh cilantro, chopped (for garnish)

Optional: avocado slices and lime wedges for serving

Instructions
 

Prepare the Sweet Potatoes: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced sweet potatoes and season with a pinch of salt and pepper. Cook for about 10-12 minutes, stirring occasionally, until they are tender and lightly browned.

    Sauté Aromatics: Push the sweet potatoes to one side of the skillet. In the empty side, add the remaining tablespoon of olive oil, then add the chopped onion and red bell pepper. Sauté for about 3-4 minutes until softened. Add the minced garlic and cook for another minute until fragrant.

      Cook the Ground Turkey: Add the ground turkey to the skillet, breaking it up with a spatula. Sprinkle in the cumin, smoked paprika, chili powder, and a bit more salt and pepper. Cook for 5-7 minutes, stirring occasionally until the turkey is fully cooked and no longer pink.

        Combine Everything: Once the turkey is cooked, mix everything together in the skillet. Stir in the chopped spinach or kale and cook for an additional 2-3 minutes until wilted.
