2 large sweet potatoes

1 lb ground turkey

1 small onion, diced

2 cloves garlic, minced

1 cup black beans, drained and rinsed

1 cup corn (fresh, frozen, or canned)

1 tsp chili powder

1 tsp cumin

1/2 tsp smoked paprika

1/2 tsp salt

1/4 tsp black pepper

1/2 cup shredded cheese (cheddar or Mexican blend)

Fresh cilantro, chopped (for garnish)

1 lime, cut into wedges (for serving)

Instructions
 

Preheat your oven to 400°F (200°C).

    Wash the sweet potatoes thoroughly, then poke several holes in each with a fork. Place them on a baking sheet and roast in the preheated oven for about 45-60 minutes, or until they are tender when pierced with a fork.

      While the sweet potatoes are baking, heat a large skillet over medium heat. Add a drizzle of olive oil and sauté the diced onion until translucent, about 3-4 minutes.

        Add the minced garlic to the skillet and cook for an additional 30 seconds, until fragrant.

          Increase the heat to medium-high and add the ground turkey, breaking it apart with a spatula. Cook until the turkey is browned and cooked through, about 6-8 minutes.

            Stir in the black beans, corn, chili powder, cumin, smoked paprika, salt, and black pepper. Cook for an additional 5 minutes, allowing the flavors to meld together. If the mixture seems dry, add a splash of water or broth.

              Once the sweet potatoes are cooked, remove them from the oven and let them cool for a few minutes. Cut each potato in half lengthwise and gently fluff the insides with a fork to create space for the filling.

                Spoon the turkey and bean mixture generously into each sweet potato half. Sprinkle the shredded cheese on top.

                  Return the stuffed sweet potatoes to the oven for an additional 10-15 minutes, or until the cheese is melted and bubbly.

                    Remove from the oven and garnish with fresh cilantro. Serve with lime wedges on the side for an extra burst of flavor.
