Honey Garlic Butter Roasted Carrots

1 pound baby carrots (or regular carrots, peeled and cut into sticks)

3 tablespoons unsalted butter, melted

2 tablespoons honey

3 cloves garlic, minced

1 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

Optional: Fresh parsley, chopped for garnish

Instructions
 

Preheat your oven to 400°F (200°C).

    In a large bowl, combine the melted butter, honey, minced garlic, salt, pepper, and thyme. Mix well until all the ingredients are incorporated.

      Add the carrots to the bowl and toss them in the honey garlic butter mixture until they are evenly coated.

        Line a baking sheet with parchment paper for easier cleanup. Spread the carrots out in a single layer on the prepared baking sheet.

          Roast the carrots in the preheated oven for 25-30 minutes, turning them halfway through, until they are tender and caramelized.

            Remove from the oven and let them cool for a couple of minutes. If desired, sprinkle with chopped fresh parsley before serving.
