Ingredients

1 lb baby carrots or whole carrots, peeled and cut into sticks

3 tablespoons unsalted butter

2 tablespoons honey

4 cloves garlic, minced

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

Salt and pepper, to taste

Optional: Chopped fresh parsley for garnish

Instructions

Preheat your oven to 400°F (200°C).

In a small saucepan over medium heat, melt the unsalted butter. Once melted, stir in the honey, minced garlic, thyme, salt, and pepper. Cook for 2-3 minutes, until fragrant.

In a large mixing bowl, combine the carrots with the honey garlic butter mixture. Toss well to ensure all carrots are evenly coated.

Spread the coated carrots in a single layer on a baking sheet lined with parchment paper.

Roast in the preheated oven for 25-30 minutes, or until the carrots are tender and caramelized, tossing halfway through for even cooking.

Remove from the oven, taste, and adjust seasoning if needed. If you'd like, garnish with fresh chopped parsley before serving.

Serve warm and enjoy the sweet and savory flavor!
