2 medium sweet potatoes, peeled and diced

3 cups mixed salad greens (arugula, spinach, and romaine)

1 cup cherry tomatoes, halved

1/2 red onion, thinly sliced

1/2 cup crumbled feta cheese

1/4 cup pecans, roughly chopped

1/4 cup honey

3 tablespoons olive oil

2 tablespoons apple cider vinegar

1 teaspoon Dijon mustard

Salt and pepper to taste

Roast the Sweet Potatoes: Preheat your oven to 425°F (220°C). Toss the diced sweet potatoes with a tablespoon of olive oil, salt, and pepper. Spread them out on a baking sheet in a single layer and roast in the preheated oven for 25-30 minutes, or until tender and slightly caramelized. Remove from the oven and let cool.

    Prepare the Dressing: In a small bowl, whisk together honey, remaining olive oil, apple cider vinegar, Dijon mustard, salt, and pepper. Adjust seasoning to taste.
