Ingredients

1 cup all-purpose flour

2 tablespoons granulated sugar

1 tablespoon baking powder

1/2 teaspoon salt

1 cup milk

1 large egg

2 tablespoons melted butter

1 teaspoon vanilla extract

1/2 cup mini marshmallows

1/2 cup chocolate chips

1/2 cup crushed graham crackers (plus extra for garnish)

Whipped cream (for serving)

Chocolate syrup (for drizzling)

Instructions

Prepare the Batter: In a large bowl, whisk together the flour, sugar, baking powder, and salt until well blended. In another bowl, combine the milk, egg, melted butter, and vanilla extract. Pour the wet ingredients into the dry ingredients and mix gently until just combined. Be careful not to overmix; it’s okay if the batter is slightly lumpy.

Fold in the Goodies: Gently fold in the mini marshmallows, chocolate chips, and crushed graham crackers into the batter, ensuring they are evenly distributed.

Heat the Skillet: Preheat a non-stick skillet or griddle over medium heat. Lightly grease it with cooking spray or the remaining melted butter.

Cooking the Pancakes: Pour about 1/4 cup of batter onto the skillet for each pancake. Cook for 2-3 minutes or until small bubbles form on the surface and the edges start to look set. Flip the pancakes and cook for an additional 2-3 minutes until golden brown.

Stack and Serve: Create a pancake stack with 2-3 pancakes on each plate. Top generously with whipped cream, a drizzle of chocolate syrup, and sprinkle extra crushed graham crackers on top to enhance the s’mores effect.

Garnish and Enjoy: For an extra touch, toast a few more marshmallows over an open flame or in the microwave for a few seconds until they puff up, then add them on top of the whipped cream. Serve immediately and indulge in this delightful breakfast treat!
