2 cups apple cider

2 cups all-purpose flour

1 cup granulated sugar

1 teaspoon baking powder

1 teaspoon baking soda

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/2 teaspoon salt

1 large egg

1/2 cup unsweetened applesauce

1/4 cup vegetable oil

1 teaspoon vanilla extract

1/2 cup powdered sugar (for coating)

Extra ground cinnamon and sugar (for coating)

Instructions
 

Reduce the Cider: In a saucepan, bring the apple cider to a boil over medium-high heat. Reduce the heat and let it simmer until it's reduced to about 1/2 cup (approximately 10-15 minutes). Allow it to cool slightly.

    Preheat Oven: Preheat your oven to 350°F (175°C) and grease a donut pan with cooking spray.

      Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, baking soda, cinnamon, nutmeg, and salt until evenly combined.

        Combine Wet Ingredients: In another bowl, mix the reduced apple cider, egg, applesauce, vegetable oil, and vanilla extract until well combined.

          Combine Wet and Dry Ingredients: Pour the wet mixture into the dry ingredients and stir gently until just combined. Be careful not to overmix; a few lumps are okay.

            Fill the Pan: Spoon or pipe the batter into the prepared donut pan, filling each cavity about 2/3 full.
