Ingredients

2 cups apple cider

2 cups all-purpose flour

1 teaspoon baking powder

1 teaspoon baking soda

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/2 teaspoon salt

1/2 cup granulated sugar

1/4 cup brown sugar, packed

1/2 cup unsweetened applesauce

1 large egg

1 teaspoon vanilla extract

1/4 cup melted unsalted butter

1/4 cup granulated sugar (for coating)

1 teaspoon ground cinnamon (for coating)

Instructions

Reduce the Apple Cider: In a saucepan, bring the apple cider to a boil over medium heat. Reduce the heat and simmer until the cider is reduced to about 1 cup (this may take about 20-30 minutes). Allow it to cool slightly.

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a donut pan with non-stick spray or lightly oil it.

Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, baking powder, baking soda, ground cinnamon, ground nutmeg, and salt. Set aside.

Mix Wet Ingredients: In another bowl, combine the reduced apple cider, granulated sugar, brown sugar, applesauce, egg, vanilla extract, and melted butter. Whisk until well combined.

Combine Mixtures: Gradually add the wet mixture to the dry ingredients, stirring until just combined. Do not overmix; a few lumps are okay.

Fill the Pan: Using a piping bag or a spoon, carefully fill each donut cavity in the pan about 3/4 full with the batter.

Bake: Bake in the preheated oven for 10-12 minutes, or until the donuts spring back when lightly touched and a toothpick inserted comes out clean.

Cool: Allow the donuts to cool in the pan for about 5 minutes before transferring them to a wire rack to cool completely.

Coating: While the donuts are cooling, mix the granulated sugar and ground cinnamon in a shallow dish. Once the donuts have cooled slightly, roll them in the cinnamon-sugar mixture to coat them thoroughly.

Serve: Enjoy your irresistible apple cider donuts fresh or store them in an airtight container for up to 3 days.
