Ingredients

2 cups rolled oats

2 cups almond milk (or milk of your choice)

2 large apples, peeled and diced (preferably Granny Smith or Honeycrisp)

1/2 cup unsweetened applesauce

1/4 cup maple syrup (or honey)

1 tsp vanilla extract

1 tbsp ground cinnamon

1/2 tsp nutmeg

1/4 tsp salt

1/2 cup chopped nuts (e.g., walnuts or pecans)

1/2 cup dried fruit (e.g., raisins or cranberries) – optional

1/4 cup chia seeds (for extra nutrition)

Instructions

Preheat the Oven: Start by preheating your oven to 350°F (175°C) and lightly greasing a 9x13-inch baking dish.

Combine Wet Ingredients: In a large mixing bowl, whisk together the almond milk, applesauce, maple syrup, and vanilla extract until well combined.

Add Dry Ingredients: In the same bowl, add rolled oats, cinnamon, nutmeg, and salt. Mix until the oats are thoroughly coated.

Incorporate Apples and Nuts: Fold in the diced apples, chopped nuts, dried fruit (if using), and chia seeds. Mix gently to combine all ingredients evenly.

Transfer to Baking Dish: Pour the oatmeal mixture into the prepared baking dish, spreading it evenly.

Bake: Bake in the preheated oven for about 30-35 minutes, or until the top is golden brown and the oatmeal is set. You can test the doneness by inserting a knife or toothpick in the center – it should come out clean.

Cool and Serve: Once done, remove the breakfast bake from the oven and let it cool for a few minutes. Cut into squares and serve warm, optionally topped with a drizzle of extra maple syrup and some fresh fruit.
