1 cup granulated sugar

1 teaspoon baking powder

2 large eggs

¾ cup unsweetened applesauce

½ cup vegetable oil

1 teaspoon vanilla extract

2 cups diced apples (about 2 medium apples, peeled and cored)

½ cup chopped walnuts or pecans (optional)

½ cup brown sugar (for topping)

1 teaspoon cinnamon (for topping)

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease the cups to prevent sticking.

    Combine Dry Ingredients: In a large bowl, whisk together the flour, granulated sugar, baking powder, baking soda, cinnamon, and salt until well combined.

      Mix Wet Ingredients: In another bowl, beat the eggs, then add the applesauce, vegetable oil, and vanilla extract. Mix until smooth and fully incorporated.
