1 cup granulated sugar

1 teaspoon baking powder

1 teaspoon baking soda

½ cup unsalted butter, melted

1 cup buttermilk (or milk mixed with 1 tablespoon vinegar)

2 large eggs

1 teaspoon vanilla extract

2 cups peeled and diced apples (such as Granny Smith or Honeycrisp)

½ cup chopped walnuts or pecans (optional)

1 tablespoon brown sugar (for topping)

½ teaspoon ground cinnamon (for topping)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it lightly with cooking spray.

    Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, baking soda, ground cinnamon, and salt until well combined.

      Combine Wet Ingredients: In another medium bowl, whisk together the melted butter, buttermilk, eggs, and vanilla extract until smooth.

        Blend Wet and Dry: Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to overmix; a few lumps are okay!

          Add Apples and Nuts: Fold in the diced apples and walnuts or pecans (if using) until evenly distributed throughout the batter.
