12 oz fettuccine pasta

1 lb shrimp, peeled and deveined

2 tbsp olive oil

1 cup coconut milk

1/2 cup heavy cream

3 cloves garlic, minced

1 medium onion, diced

1 red bell pepper, sliced

1 green bell pepper, sliced

2 tsp jerk seasoning

1 tsp paprika

Salt and black pepper to taste

Juice of 1 lime

Fresh parsley, chopped (for garnish)

Grated Parmesan cheese (optional)

Instructions
 

Cook the Pasta: In a large pot of boiling salted water, cook the fettuccine according to package instructions until al dente. Drain and set aside.
