Ingredients

For the Meatballs:

1 lb ground beef (or ground pork)

1/2 cup breadcrumbs

1/4 cup green onions, finely chopped

2 cloves garlic, minced

1 tablespoon ginger, minced

2 tablespoons soy sauce

2 tablespoons gochujang (Korean chili paste)

1 tablespoon sesame oil

1 tablespoon brown sugar

1 large egg

Salt and pepper to taste

For the Spicy Mayo Dip:

1/2 cup mayonnaise

2 tablespoons gochujang

1 tablespoon rice vinegar

1 teaspoon lemon juice

1/2 teaspoon garlic powder

Sesame seeds and sliced green onions for garnish (optional)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.

Prepare the Meatball Mixture: In a large mixing bowl, combine the ground beef (or pork), breadcrumbs, green onions, garlic, ginger, soy sauce, gochujang, sesame oil, brown sugar, egg, salt, and pepper. Mix until just combined; do not overmix to keep the meatballs tender.

Form the Meatballs: Using your hands, scoop out about 1.5 tablespoons of the mixture and roll it into a ball. Place each meatball onto the prepared baking sheet, leaving some space between each one.

Bake the Meatballs: Bake in the preheated oven for 15-20 minutes or until they are fully cooked through and have a nice golden-brown color.

Make the Spicy Mayo Dip: While the meatballs are baking, prepare the dip by combining mayonnaise, gochujang, rice vinegar, lemon juice, and garlic powder in a small bowl. Mix until smooth and well combined. Adjust the spice level by adding more gochujang if desired.

Serve: Once the meatballs are cooked, remove them from the oven and let them cool for a minute. Serve the meatballs warm with the spicy mayo dip on the side. Garnish with sesame seeds and sliced green onions if desired.
