Ingredients
  

8 oz whole grain pasta (fusilli or penne)

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1 bell pepper, diced (any color)

1/2 red onion, finely chopped

1/4 cup fresh basil leaves, chopped

1/4 cup olive oil

3 tbsp freshly squeezed lemon juice

1 tsp lemon zest

1 tsp Dijon mustard

Salt and pepper to taste

1/4 cup toasted pine nuts (optional for garnish)

Instructions
 

Cook the Pasta: In a large pot of boiling salted water, cook the whole grain pasta according to the package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.

    Prepare Vegetables: While the pasta is cooking, chop the cherry tomatoes, cucumber, bell pepper, and red onion. Place them in a large mixing bowl.

      Make the Dressing: In a small bowl, whisk together the olive oil, lemon juice, lemon zest, Dijon mustard, salt, and pepper. Adjust seasoning to your taste.

        Combine: Add the cooked pasta to the bowl with the chopped vegetables. Pour the dressing over the salad and toss everything together until evenly coated.

          Add Basil: Gently fold in the freshly chopped basil leaves.

            Chill: For best flavor, allow the pasta salad to sit for at least 30 minutes in the fridge to let the flavors meld together.
