12 oz spaghetti or linguine

1 lb large shrimp, peeled and deveined

4 cloves garlic, minced

1 lemon, zested and juiced

3 cups fresh spinach, chopped

1/4 cup olive oil

1/4 teaspoon red pepper flakes (optional)

Salt and pepper, to taste

1/2 cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Cook the Pasta: In a large pot of salted boiling water, cook the spaghetti or linguine according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

    Sauté the Shrimp: In a large skillet, heat the olive oil over medium heat. Add minced garlic and red pepper flakes, sauté for about 30 seconds until fragrant.

      Add Shrimp: Add the shrimp to the skillet, seasoning with salt and pepper. Cook for about 2-3 minutes on each side or until the shrimp turn pink and opaque.

        Combine Ingredients: Add the cooked pasta to the skillet with the shrimp. Pour in the lemon juice and zest, and add the chopped spinach. Toss everything together, adding reserved pasta water as needed to reach desired consistency.
