Ingredients

2 boneless, skinless chicken breasts

Salt and pepper, to taste

2 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon red pepper flakes (adjust to taste)

1 cup sun-dried tomatoes, chopped

1 cup heavy cream

1 cup chicken broth

1 cup freshly grated Parmesan cheese

8 ounces fettuccine pasta

2 cups baby spinach

Fresh basil, for garnish

Extra Parmesan cheese, for serving

Instructions

Cook the pasta: Bring a large pot of salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Drain and set aside.

Prepare the chicken: While the pasta cooks, season both sides of the chicken breasts with salt and pepper.

Sear the chicken: In a large skillet, heat the olive oil over medium heat. Add the chicken breasts and cook for about 5-7 minutes on each side or until golden brown and cooked through. Remove from the skillet, let rest for a few minutes, then slice into strips.

Sauté aromatics: In the same skillet, add minced garlic and red pepper flakes. Sauté for about 30 seconds until fragrant.

Create the sauce: Add the sun-dried tomatoes to the skillet, then pour in the heavy cream and chicken broth. Stir well and bring to a gentle simmer.

Add cheese and spinach: Stir in the Parmesan cheese until melted and smooth. Then, add the baby spinach, mixing until wilted.

Combine pasta and sauce: Add the drained fettuccine to the skillet, tossing to coat the pasta thoroughly in the creamy sauce. If the sauce is too thick, add a bit more chicken broth to reach your desired consistency.

Finish with chicken: Add the sliced chicken back into the skillet, mixing gently to combine everything beautifully.

Serve: Plate the pasta and garnish with fresh basil and extra Parmesan cheese. Enjoy your romantic meal!
