Ingredients

4 boneless, skinless chicken breasts

Salt and pepper, to taste

2 tablespoons olive oil

3 cloves garlic, minced

1 teaspoon Italian seasoning

1 cup heavy cream

1 cup chicken broth

1 cup grated Parmesan cheese

8 ounces fettuccine pasta

1 cup cherry tomatoes, halved

Fresh basil, for garnish

Red pepper flakes, optional for heat

Instructions

Cook the Pasta: In a large pot of salted boiling water, cook the fettuccine according to package instructions until al dente. Drain and set aside, reserving 1 cup of pasta water.

Prepare the Chicken: Season the chicken breasts on both sides with salt and pepper. In a large skillet, heat olive oil over medium-high heat. Add the chicken and sear until golden brown, about 5-6 minutes per side. Remove chicken from the skillet and set aside.

Make the Sauce: In the same skillet, add minced garlic and sauté for about 30 seconds or until fragrant. Stir in the Italian seasoning, chicken broth, and heavy cream. Bring to a gentle simmer, scraping up any browned bits from the bottom of the pan.

Add Cheese and Tomatoes: Reduce heat to low and stir in the grated Parmesan cheese until melted and combined. Add cherry tomatoes and stir to combine. Allow the sauce to thicken for about 3-4 minutes.

Combine: Slice the seared chicken and add it back into the skillet. Add the cooked fettuccine and toss to coat everything in the creamy sauce. If the sauce is too thick, use the reserved pasta water to reach your desired consistency.

Serve: Plate the pasta and garnish with fresh basil and a sprinkle of red pepper flakes for some heat, if desired.
