2 boneless, skinless chicken breasts

2 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon ginger, minced

1 teaspoon red pepper flakes (adjust to taste)

1 can (14 oz) coconut milk

2 cups chicken broth

4 tablespoons soy sauce

1 tablespoon fish sauce

2 tablespoons brown sugar

3 packs of instant ramen noodles (discard seasoning packets)

2 cups baby spinach

1 cup sliced mushrooms

2 green onions, sliced

2 soft-boiled eggs (optional for topping)

Fresh cilantro for garnish

Prepare the Chicken: Season the chicken breasts with salt and pepper. In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and sear for about 6-7 minutes on each side until golden brown and cooked through. Remove from the skillet and let them rest before slicing them into strips.
