Mediterranean Chicken Pasta Salad

Made with fusilli or penne pasta, this salad is as nutritious as it is delicious. Quick to prepare, you can have it ready in just 45 minutes. Ingredients
  

8 oz fusilli or penne pasta

2 cups cooked, shredded chicken breast

1 cup cherry tomatoes, halved

1/2 cup cucumber, diced

1/2 cup red onion, finely chopped

1/2 cup Kalamata olives, pitted and sliced

1/2 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

1/4 cup olive oil

2 tbsp red wine vinegar

1 clove garlic, minced

1 tsp dried oregano

Salt and pepper to taste

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and rinse under cold water to cool.

    Prepare the Dressing: In a small bowl, whisk together olive oil, red wine vinegar, minced garlic, dried oregano, salt, and pepper until well combined.

      Combine Ingredients: In a large mixing bowl, combine the cooked pasta, shredded chicken, cherry tomatoes, cucumber, red onion, Kalamata olives, feta cheese, and chopped parsley.

        Dress the Salad: Pour the dressing over the pasta mixture and toss gently until everything is well coated. Adjust seasoning with additional salt and pepper if necessary.

          Serve: Chill the salad in the refrigerator for at least 30 minutes to let the flavors meld together. Serve cold or at room temperature.
