Ingredients

2 tbsp olive oil

1 medium onion, diced

2 garlic cloves, minced

2 medium carrots, diced

2 celery stalks, diced

1 lb boneless, skinless chicken thighs (or breasts), cut into bite-sized pieces

6 cups chicken broth

1 cup heavy cream

1 cup fresh spinach, chopped

1 lemon (zested and juiced)

1 tsp dried oregano

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Crusty bread, for serving (optional)

Instructions

Sauté Vegetables: In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes. Stir in the garlic, carrots, and celery, cooking for an additional 5 minutes until the vegetables soften.

Cook Chicken: Add the chicken pieces into the pot, season with salt, pepper, and oregano. Cook until the chicken is no longer pink, about 5-6 minutes.

Add Broth: Pour in the chicken broth and bring the mixture to a boil. Reduce the heat and let it simmer for about 20 minutes, allowing the flavors to meld.

Creamy Finish: Stir in the heavy cream, spinach, lemon juice, and zest. Continue simmering for another 5 minutes, allowing the soup to become creamy and the spinach to wilt.

Taste and Adjust: Taste the soup and adjust the seasoning with additional salt, pepper, or lemon juice according to your preference.

Serve: Ladle the warm, creamy soup into bowls, garnish with chopped parsley, and serve with crusty bread on the side for dipping.
