Ingredients

1 can (20 oz) crushed pineapple in juice, drained

1 can (14 oz) sweetened condensed milk

1 cup heavy whipping cream

1 tsp vanilla extract

8 oz cream cheese, softened

1/2 cup powdered sugar

1 cup crushed graham crackers

1/4 cup unsalted butter, melted

Maraschino cherries and fresh mint leaves for garnish

Instructions

Prepare the Crust: In a mixing bowl, combine crushed graham crackers and melted butter. Stir until the mixture resembles wet sand. Press this mixture firmly into the bottom of a 9-inch pie dish or a similar-sized serving dish to form an even layer. Set aside.

Make the Cream Cheese Mixture: In a separate mixing bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add sweetened condensed milk, mixing until fully combined.

Whip the Cream: In another bowl, whip the heavy cream and vanilla extract until soft peaks form. Gently fold in the whipped cream into the cream cheese mixture until well integrated.

Integrate Pineapple: Carefully fold in the drained crushed pineapple into the cream mixture until just combined, making sure to keep the mixture light and airy.

Layer the Dessert: Pour the pineapple cream mixture over the prepared graham cracker crust, smoothing the top with a spatula.

Chill: Cover the dessert with plastic wrap and refrigerate for at least 4 hours, or overnight if possible, to allow it to set properly.

Serve: Once chilled and set, slice the dessert into squares or scoops, serve on plates, and garnish with maraschino cherries and fresh mint leaves.
