4 boneless, skinless chicken thighs

1 cup long-grain white rice

2 cups chicken broth

1/2 cup honey

1/2 cup BBQ sauce (your favorite brand)

1 tablespoon olive oil

1 onion, finely chopped

3 cloves garlic, minced

1 bell pepper, diced (any color)

1 teaspoon paprika

Salt and pepper, to taste

1 cup frozen corn (optional)

Fresh parsley, chopped for garnish

Prepare the Chicken: Season the chicken thighs with salt, pepper, and paprika on both sides.

    Sauté Vegetables: In a large skillet, heat olive oil over medium heat. Add the chopped onion and bell pepper, and sauté until softened, about 5 minutes. Add the minced garlic and cook for an additional minute until fragrant.

      Add Chicken: Push the vegetables to one side of the pan. Place the seasoned chicken thighs in the skillet and sear for about 4-5 minutes on each side until golden brown. Remove the chicken from the pan and set it aside.

        Combine Rice and Sauces: In the same skillet, pour in the rice, chicken broth, honey, and BBQ sauce. Stir well to combine all ingredients, ensuring the rice is evenly distributed.

          Simmer Together: Nestle the chicken thighs back into the rice mixture. If using, sprinkle the frozen corn over the top.
