1 lb (450g) boneless, skinless chicken thighs, cubed

1 tablespoon olive oil

3 cloves garlic, minced

1 medium onion, diced

1 teaspoon dried thyme

1 teaspoon dried oregano

1 cup (240ml) chicken broth

1 cup (240ml) heavy cream

Juice and zest of 1 large lemon

1 lb (450g) potato gnocchi

2 cups baby spinach

Salt and pepper, to taste

Fresh parsley, chopped, for garnish

Grated Parmesan cheese, for serving

Instructions
 

Sear the Chicken: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the cubed chicken thighs, season with salt and pepper, and sauté until browned and cooked through, about 5-7 minutes. Remove the chicken from the pot and set aside.

    Sauté Aromatics: In the same pot, add the diced onion and minced garlic. Sauté for 2-3 minutes until the onion is translucent and fragrant.

      Add Herbs and Liquids: Stir in the dried thyme and oregano, then pour in the chicken broth and heavy cream. Add the lemon juice and zest, stirring to combine.

        Cook the Gnocchi: Bring the mixture to a gentle simmer and then add the potato gnocchi. Cook according to package instructions, usually about 2-3 minutes, until the gnocchi rise to the surface and are cooked through.

          Incorporate Spinach: Once the gnocchi are cooked, stir in the baby spinach and the cooked chicken. Let it simmer for an additional 2-3 minutes until the spinach is wilted and everything is heated through.
