Peruvian Grilled Chicken with Creamy Green Sauce

For the Chicken Marinade:

4 boneless, skinless chicken thighs

4 cloves garlic, minced

1 tablespoon ground cumin

1 tablespoon paprika

1 teaspoon black pepper

1 teaspoon salt

1/4 cup olive oil

Juice of 2 limes

1 tablespoon white vinegar

1 tablespoon fresh cilantro, chopped

For the Creamy Green Sauce:

1 cup fresh cilantro leaves

1 jalapeño, seeded (optional for less heat)

1/4 cup mayonnaise

1/4 cup Greek yogurt

Juice of 1 lime

2 cloves garlic

Salt and pepper to taste

For Garnish:

Lime wedges

Instructions
 

Marinate the Chicken:

    - In a large bowl, combine minced garlic, ground cumin, paprika, black pepper, salt, olive oil, lime juice, white vinegar, and chopped cilantro. Mix well.

      - Add the chicken thighs to the marinade, ensuring they are well-coated. Cover and refrigerate for at least 1 hour (up to overnight for more flavor).

        Prepare the Creamy Green Sauce:

          - In a blender or food processor, combine cilantro leaves, jalapeño, mayonnaise, Greek yogurt, lime juice, and garlic. Blend until smooth and creamy.

            - Season with salt and pepper to taste. Set aside in the refrigerator to chill until serving.

              Preheat the Grill:

                - Preheat your grill to medium-high heat (about 375°F to 400°F). If using a grill pan, heat it on the stove over medium-high.

                  Grill the Chicken:

                    - Remove the chicken from the marinade and shake off excess. Place the chicken thighs on the grill.

                      - Grill for about 6-7 minutes on each side or until the chicken is cooked through and has nice grill marks, reaching an internal temperature of 165°F.

                        Serve:
