500g boneless chicken, cut into bite-sized pieces

2 tablespoons butter

1 tablespoon vegetable oil

1 medium onion, finely chopped

3 cloves garlic, minced

1-inch piece ginger, grated

1 can (400g) crushed tomatoes

1 cup heavy cream

2 teaspoons garam masala

1 teaspoon ground cumin

1 teaspoon ground coriander

1 teaspoon turmeric powder

1 teaspoon chili powder (adjust to taste)

Salt to taste

Fresh cilantro, chopped (for garnish)

Instructions
 

Marinate the Chicken: In a bowl, combine the chicken pieces with salt, turmeric, and a pinch of ground cumin. Set aside for 10-15 minutes to let the flavors meld.

    Cook the Chicken: In a large skillet, heat the vegetable oil and 1 tablespoon of butter over medium-high heat. Add the marinated chicken pieces and sauté until they are cooked through and golden brown on all sides, about 5-7 minutes. Remove the chicken from the skillet and set aside.

      Prepare the Sauce: In the same skillet, add the remaining tablespoon of butter. Once melted, add the chopped onion and sauté until translucent, about 3-4 minutes. Stir in the minced garlic and grated ginger, and cook for another 1-2 minutes until fragrant.

        Add Tomatoes and Spices: Pour in the crushed tomatoes along with garam masala, ground cumin, ground coriander, and chili powder. Season with salt to taste. Let the mixture simmer for about 5 minutes, allowing the flavors to blend.

          Combine Chicken with Sauce: Return the cooked chicken to the skillet and mix well to coat the chicken in the sauce. Pour in the heavy cream and stir until fully combined. Let it simmer for an additional 5-10 minutes on low heat until the sauce thickens and the chicken is heated through.

            Garnish and Serve: Remove from heat and garnish with freshly chopped cilantro. Serve your butter chicken hot with steamed basmati rice or naan bread for a complete meal!
