1 lb (450 g) sirloin steak, cut into 1-inch cubes

3 tablespoons olive oil

4 cloves garlic, minced

2 tablespoons fresh rosemary, chopped

1 teaspoon fresh thyme, chopped (optional)

2 tablespoons balsamic vinegar

1 teaspoon salt

1/2 teaspoon black pepper

1 red bell pepper, cut into squares

1 yellow bell pepper, cut into squares

1 red onion, cut into wedges

Marinate the Steak: In a medium bowl, combine olive oil, minced garlic, chopped rosemary, thyme (if using), balsamic vinegar, salt, and black pepper. Add the cubed steak and toss until evenly coated. Cover and let marinate for at least 30 minutes at room temperature or up to 2 hours in the refrigerator for deeper flavor.

    Prep the Skewers: If using wooden skewers, soak them in water for at least 30 minutes to prevent burning on the grill. If using metal skewers, ensure they are clean and dry.

      Assemble the Kebabs: Thread the marinated steak cubes onto the skewers, alternating with pieces of red bell pepper, yellow bell pepper, and red onion. Leave a little space between each piece for even cooking.

        Grill the Kebabs: Preheat a grill or grill pan over medium-high heat. Lightly oil the grill grates to prevent sticking. Place the skewers on the grill and cook for about 10-12 minutes for medium-rare, turning occasionally, until the steak is browned and cooked to your desired doneness.

          Rest and Serve: Remove the kebabs from the grill and let them rest for a few minutes before serving. This allows the juices to redistribute, ensuring juicy steaks. Serve hot with a side of grilled vegetables or a fresh salad.
