Ingredients
  

2 cups cooked jasmine rice (preferably day-old)

1 lb boneless, skinless chicken thighs, diced

2 tablespoons soy sauce

1 tablespoon mirin (Japanese sweet rice wine)

1 tablespoon sesame oil

1 tablespoon vegetable oil

1 cup mixed vegetables (peas, carrots, corn)

3 green onions, chopped

2 cloves garlic, minced

1-inch piece ginger, minced

2 eggs, lightly beaten

1 teaspoon rice vinegar

Salt and pepper to taste

Optional: 1 teaspoon gochujang (Korean chili paste) for a spicy kick

Sesame seeds for garnish

Instructions
 

Marinate the Chicken: In a bowl, combine diced chicken thighs with soy sauce, mirin, and a pinch of salt and pepper. Let it marinate for at least 15 minutes.

    Prepare the Rice: If using refrigerated rice, break up any clumps with a fork to ensure even cooking.

      Cook the Chicken: In a large skillet or wok, heat vegetable oil over medium-high heat. Add the marinated chicken and cook until golden brown and cooked through, about 5-7 minutes. Remove from the skillet and set aside.

        Sauté Aromatics: In the same skillet, add sesame oil. Once hot, add minced garlic and ginger, sautéing for about 30 seconds until fragrant.

          Add Veggies: Toss in the mixed vegetables and cook for another 2-3 minutes until they are heated through.

            Scramble Eggs: Push the vegetables to one side of the skillet and pour the beaten eggs into the other side. Scramble until just set, then mix everything together.

              Add Rice and Season: Add the cooked rice to the skillet. Pour in the rice vinegar, and if using, the gochujang. Mix everything well to combine. Season with salt and pepper to taste.

                Combine Chicken and Green Onions: Return the cooked chicken to the skillet and add the chopped green onions. Stir until everything is well combined and heated through.

                  Serve and Garnish: Serve the fried rice hot, garnished with sesame seeds and extra green onions if desired.
