Sheet Pan Sausage and Veggies

Ingredients
  

1 lb (450g) Italian sausage (mild or spicy, your choice)

2 bell peppers (red and yellow), sliced

1 medium red onion, sliced

2 cups broccoli florets

1 cup cherry tomatoes, halved

4 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon dried oregano

1 teaspoon paprika

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 425°F (220°C) and line a large sheet pan with parchment paper for easy cleanup.

    In a large bowl, combine the sliced bell peppers, red onion, broccoli, and cherry tomatoes. Toss with olive oil, oregano, paprika, minced garlic, salt, and pepper until the veggies are evenly coated.

      Arrange the veggie mixture on one side of the prepared sheet pan.

        In the same bowl, add the Italian sausages and toss lightly with any remaining oil and seasonings, then arrange them on the other side of the sheet pan.

          Place the tray in the oven and roast for 25–30 minutes, or until the sausages are cooked through and the vegetables are tender and caramelized.

            Once cooked, remove from the oven and let rest for a few minutes.

              Garnish with fresh parsley before serving. Enjoy this hearty meal straight from the pan, or serve it over rice or with crusty bread!
