For the Avocado Bowls:

2 ripe avocados, diced

1 cup cooked quinoa or rice

1 cup cherry tomatoes, halved

1/4 cup fresh cilantro, chopped

For the Mango Salsa:

1/2 red onion, finely chopped

1 jalapeño, seeded and minced

Juice of 1 lime

Salt, to taste

For the Lime-Chili Sauce:

1/4 cup sour cream or Greek yogurt

Juice of 1 lime

1 teaspoon chili powder

1 teaspoon honey

Pinch of salt

Instructions

Marinate the Shrimp: In a bowl, combine the shrimp with olive oil, garlic powder, smoked paprika, salt, pepper, and lime juice. Allow to marinate for at least 15 minutes.

Prepare the Mango Salsa: In a separate bowl, combine the diced mango, red onion, jalapeño, cilantro, lime juice, and salt. Mix well and set aside to allow the flavors to meld.

Cook the Shrimp: Heat a large skillet over medium-high heat. Add the marinated shrimp and cook for 2-3 minutes on each side, or until pink and opaque. Remove from heat and set aside.

Make the Lime-Chili Sauce: In a small bowl, stir together sour cream (or Greek yogurt), lime juice, chili powder, honey, and a pinch of salt until smooth. Adjust seasoning to taste.

Assemble the Bowls: Start with a base of cooked quinoa or rice in each bowl. Top with diced avocado, cherry tomatoes, cooked shrimp, and a generous scoop of mango salsa.

Drizzle the Sauce: Finish each bowl with a drizzle of the lime-chili sauce and extra cilantro if desired.

Serve: Enjoy your Shrimp and Avocado Bowls immediately for a fresh and vibrant meal!
