Ingredients

1 lb (450g) flank steak, sliced thinly against the grain

2 tablespoons soy sauce

1 tablespoon cornstarch

2 tablespoons vegetable oil, divided

1 bell pepper (red or yellow), sliced into strips

1 green bell pepper, sliced into strips

1 medium onion, sliced

3 cloves garlic, minced

1 tablespoon fresh ginger, minced

3 tablespoons oyster sauce

1 tablespoon sesame oil

Salt and pepper to taste

Cooked jasmine rice or noodles (for serving)

Sliced green onions and sesame seeds (for garnish)

Instructions

Marinate the Steak: In a large bowl, combine the sliced flank steak with soy sauce and cornstarch. Toss well to coat and let marinate for 15-20 minutes while you prepare the veggies.

Prep the Vegetables: Slice the bell peppers and onion, and mince the garlic and ginger.

Heat the Pan: In a large wok or skillet, heat 1 tablespoon of vegetable oil over high heat until shimmering.

Cook the Steak: Add the marinated steak to the hot skillet in a single layer. Cook for 2-3 minutes without stirring to develop a nice sear. Once seared, stir-fry the steak for another 1-2 minutes until just cooked through. Remove the steak from the skillet and set it aside.

Sauté the Vegetables: In the same skillet, add the remaining tablespoon of vegetable oil. Toss in the sliced onions and sauté for about 2 minutes until they begin to soften. Add the bell peppers, garlic, and ginger, and continue to sauté for another 3-4 minutes until the peppers are tender yet crisp.

Combine Everything: Return the cooked steak to the skillet with the vegetables. Pour the oyster sauce and sesame oil over the mixture. Toss everything together to heat through and mix well, about 1-2 minutes. Season with salt and pepper to taste.

Serve: Serve the sizzling pepper steak over a bed of jasmine rice or noodles. Garnish with sliced green onions and sprinkle with sesame seeds for an extra touch.
