Ingredients

2 ripe bananas, mashed

1 cup all-purpose flour

1/4 cup granulated sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon ground cinnamon

1/4 teaspoon salt

1/2 cup milk (dairy or non-dairy)

1 large egg

1 teaspoon vanilla extract

1/2 cup chopped walnuts or pecans (optional)

1/4 cup vegetable oil (for frying)

Powdered sugar (for dusting, optional)

Instructions

Prepare the Batter: In a large mixing bowl, combine the mashed bananas, milk, egg, and vanilla extract. Mix until well incorporated.

Mix Dry Ingredients: In another bowl, whisk together the flour, granulated sugar, baking powder, baking soda, ground cinnamon, and salt.

Combine: Gradually add the dry ingredients to the wet ingredients, stirring just until the mixture is combined. Be careful not to overmix; it's okay if there are a few lumps. If desired, fold in the chopped walnuts or pecans.

Heat the Skillet: On medium heat, add the vegetable oil to a non-stick skillet. Ensure the oil is hot enough by testing it with a small drop of batter; it should sizzle when ready.

Fry the Fritters: Using a tablespoon, drop dollops of batter into the hot skillet, flattening them slightly with the back of the spoon. Cook for about 2-3 minutes on each side or until golden brown and cooked through. You can cook multiple fritters at once, but do not overcrowd the skillet.

Drain and Serve: Once golden, remove the fritters from the skillet and place them on a plate lined with paper towels to drain excess oil. Optionally, dust with powdered sugar for added sweetness.

Enjoy: Serve the fritters warm with syrup, honey, or fresh fruit on the side.
