Southwest Ground Beef and Sweet Potato Skillet

1 lb ground beef (85% lean)

1 medium sweet potato, peeled and diced

1 cup bell peppers (red and green), chopped

1 small onion, diced

2 cloves garlic, minced

1 can (14 oz) black beans, rinsed and drained

1 cup corn kernels (fresh or frozen)

1 cup diced tomatoes (canned or fresh)

2 tsp chili powder

1 tsp cumin

1/2 tsp smoked paprika

Salt and pepper to taste

2 tbsp olive oil

Fresh cilantro for garnish

Lime wedges for serving

Instructions
 

Prepare Ingredients: Start by dicing the sweet potato, chopping the bell peppers and onion, and mincing the garlic.

    Cook Sweet Potatoes: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced sweet potatoes and season with a pinch of salt. Cook for about 8-10 minutes, stirring occasionally, until they become tender and start to brown. Remove the sweet potatoes from the skillet and set aside.

      Sauté Aromatics: In the same skillet, add the remaining tablespoon of olive oil. Add the diced onion and bell peppers, and sauté for about 3-4 minutes until they are soft. Add the minced garlic and cook for an additional minute until fragrant.

        Brown the Beef: Push the vegetables to one side of the skillet and add the ground beef. Cook until browned, breaking it apart with a spatula, about 5-7 minutes. Drain any excess fat if necessary.

          Mix It Up: Stir in the cooked sweet potatoes, black beans, corn, and diced tomatoes. Sprinkle the chili powder, cumin, smoked paprika, salt, and pepper over the mixture. Stir well to combine all the ingredients.

            Simmer: Reduce the heat to low and let the mixture simmer for another 5-7 minutes, allowing the flavors to meld together and the dish to heat through.

              Serve: Remove from heat and garnish with fresh cilantro. Serve with lime wedges on the side for a squeeze of fresh flavor.
