2 lbs chicken thighs, boneless and skinless

1 can (14 oz) coconut milk

2 tablespoons olive oil

1 medium onion, finely chopped

4 cloves garlic, minced

2-3 fresh red chili peppers, chopped (adjust according to heat preference)

1 teaspoon ground cumin

1 teaspoon smoked paprika

1 tablespoon fresh ginger, grated

1 tablespoon lime juice

Salt and black pepper to taste

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Marinate the Chicken: In a large bowl, combine the chicken thighs, coconut milk (reserve a little for garnish), garlic, ginger, lime juice, cumin, smoked paprika, salt, and pepper. Mix well, ensuring the chicken is fully coated. Cover and marinate in the refrigerator for at least 1 hour, or overnight for more intense flavor.

    Sauté the Aromatics: In a large skillet, heat the olive oil over medium heat. Add the chopped onions and red chili peppers. Sauté for about 5-7 minutes or until the onions are soft and translucent.

      Cook the Chicken: Remove the chicken from the marinade (reserve the marinade) and add it to the skillet. Sear the chicken on both sides until golden brown, about 4-5 minutes per side.

        Add Coconut Milk: Pour the reserved marinade into the skillet with the chicken. Bring it to a gentle simmer, cover, and cook for about 20-25 minutes, or until the chicken is cooked through and tender. Stir occasionally to prevent sticking.
