Ingredients

4 boneless, skinless chicken breasts

2 tablespoons olive oil

1 cup fresh jalapeños, minced (adjust for spice preference)

3 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon ground cumin

1 teaspoon onion powder

1/2 teaspoon salt

1/2 teaspoon black pepper

1/4 cup chicken broth

1/4 cup fresh lime juice

1/2 cup fresh cilantro, chopped (for garnish)

1 avocado, sliced (for serving)

Lime wedges (for serving)

Instructions

Marinate the Chicken: In a mixing bowl, combine olive oil, minced jalapeños, garlic, smoked paprika, cumin, onion powder, salt, and black pepper. Add chicken breasts, ensuring they are well coated in the marinade. Cover and refrigerate for at least 30 minutes, or overnight for best flavor.

Cook the Chicken: Preheat a grill or stovetop grill pan over medium-high heat. Remove the chicken from the marinade and discard the marinade. Grill the chicken for about 6-7 minutes on each side, or until fully cooked and juices run clear. The internal temperature should reach 165°F (75°C).

Create a Saucy Twist: In a saucepan, combine the chicken broth and lime juice. Heat over medium heat until warmed. Add any leftover bits and pieces from the grilling process, stir well, and let it simmer for about 2-3 minutes.

Serve the Chicken: Once cooked, transfer the chicken to a cutting board, let it rest for 5 minutes, then slice into strips. Drizzle the lime-broth sauce over the chicken and garnish with fresh cilantro and sliced avocado.

Plate Like a Pro: Serve the Spicy Jalapeno Chicken with lime wedges on the side. Enjoy with your choice of rice, salad, or tortillas!
