Spinach and Feta Quesadillas (20 minutes)

Ingredients
  

4 large whole wheat tortillas

2 cups fresh spinach, chopped

1 cup feta cheese, crumbled

1 cup shredded mozzarella cheese

1 small onion, finely chopped

2 cloves garlic, minced

2 tablespoons olive oil

Salt and pepper to taste

Optional: 1 teaspoon red pepper flakes for heat

Fresh parsley for garnish (optional)

Salsa or sour cream for serving

Instructions
 

Sauté the Vegetables: In a skillet, heat one tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 2-3 minutes. Add the minced garlic and cook for an additional minute until fragrant.

    Add Spinach: Add the chopped spinach to the skillet. Cook until wilted, about 2-3 minutes. Season with salt, pepper, and red pepper flakes if using. Remove from heat and let cool slightly.

      Prepare the Quesadilla Filling: In a mixing bowl, combine the sautéed spinach mixture with crumbled feta and shredded mozzarella. Stir to combine well.

        Cook the Quesadillas: Wipe the skillet clean and add another tablespoon of olive oil. Place one tortilla in the skillet and sprinkle half of the cheese and spinach mixture evenly over the tortilla. Top with another tortilla and cook for about 3-4 minutes, or until golden brown.

          Flip and Finish: Carefully flip the quesadilla using a large spatula. Cook the other side for another 3-4 minutes until the second side is golden and the cheese has melted.

            Cut and Serve: Remove the quesadilla from the skillet and let it sit for a minute. Cut into wedges and serve warm. Garnish with fresh parsley and serve alongside salsa or sour cream.
