1 lb flank steak, thinly sliced

2 cups frozen French fries

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1 large onion, diced

2 cloves garlic, minced

1 bell pepper (any color), diced

4 large flour tortillas

2 tablespoons olive oil

1 tablespoon taco seasoning

Salt and pepper, to taste

½ cup sour cream (for serving)

½ cup salsa (for serving)

Fresh cilantro, chopped (for garnish)

Instructions
 

Cook the Fries: Preheat your oven and cook the frozen French fries according to package instructions until crispy. Set aside.

    Prepare the Steak: In a bowl, season the flank steak slices with taco seasoning, salt, and pepper.

      Sauté the Vegetables: Heat olive oil in a large skillet over medium-high heat. Add diced onion and bell pepper, sautéing until soft, about 5-7 minutes. Add garlic and cook for another minute until fragrant.

        Cook the Steak: Push the vegetables to one side of the skillet and add the seasoned steak to the other side. Sear the steak for about 3-4 minutes each side or until cooked to your desired doneness.
