Ingredients

2 cups fresh strawberries, hulled and halved

2 cups fresh peaches, pitted and sliced

1 cup granulated sugar, divided

1 tablespoon lemon juice

1 teaspoon vanilla extract

1 cup rolled oats

1/2 cup all-purpose flour

1/2 cup brown sugar, packed

1/2 teaspoon ground cinnamon

1/4 teaspoon salt

1/2 cup unsalted butter, melted

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C).

Prepare Fruit Mixture: In a large mixing bowl, combine the sliced strawberries and peaches. Add 1/4 cup of granulated sugar, lemon juice, and vanilla extract, tossing gently to coat. Set aside to let the flavors meld while you prepare the crisp topping.

Make the Crisp Topping: In another bowl, mix together oats, flour, remaining sugar, brown sugar, cinnamon, and salt. Pour in the melted butter and stir until the mixture is well combined and crumbly.

Assemble the Dish: In a greased 9x13 inch baking dish, spread the fruit mixture evenly on the bottom. Sprinkle the crisp topping over the fruit in an even layer.

Bake: Place the dish in the preheated oven and bake for approximately 30-35 minutes, or until the topping is golden brown and the fruit is bubbly.

Cool and Serve: Remove from the oven and let it cool for about 10-15 minutes before serving. This crisp is delicious served warm, and you can also top it with vanilla ice cream or whipped cream for an extra treat!
