Ingredients

2 large red onions, thinly sliced

2 tablespoons olive oil

1 tablespoon sumac spice

1 teaspoon salt

1 teaspoon sugar (optional)

Juice of 1 lemon

Fresh parsley, chopped (for garnish)

Optional: 1/2 teaspoon chili flakes for a kick

Instructions

Prepare the Onions: In a large bowl, combine the thinly sliced red onions and sprinkle them with salt. Massage the salt into the onions for about 2-3 minutes until they start to soften.

Marinate: Add the sumac, olive oil, and sugar (if using) to the onions. Squeeze the juice of one lemon over the mixture and toss everything together until the onions are well coated.

Rest: Let the onions marinate for at least 30 minutes at room temperature. This allows the flavors to meld and the onions to soften further.

Serve: Transfer the marinated onions to a serving dish and garnish with chopped fresh parsley. Optionally, sprinkle with chili flakes if you enjoy a bit of heat.

Enjoy: These zesty sumac onions can be served as a condiment, salad addition, or a side with grilled meats and vegetables.
