Teriyaki Chicken Rice Bowl

Ingredients
  

1 lb boneless, skinless chicken thighs

1 cup jasmine rice

1 cup water

¼ cup soy sauce

¼ cup brown sugar

2 tbsp rice vinegar

1 tbsp sesame oil

2 cloves garlic, minced

1 inch piece of ginger, grated

1 tbsp cornstarch mixed with 2 tbsp water (for thickening)

1 cup broccoli florets

1 red bell pepper, sliced

2 green onions, chopped (for garnish)

1 tbsp sesame seeds (for garnish)

Instructions
 

Prepare the Rice: Rinse the jasmine rice under cold water until the water runs clear. Combine with 1 cup of water in a pot and bring to a boil. Lower the heat, cover, and simmer for 15 minutes or until all the water is absorbed. Remove from heat and let sit covered for 5 minutes.

    Make the Teriyaki Sauce: In a small saucepan over medium heat, combine soy sauce, brown sugar, rice vinegar, sesame oil, minced garlic, and grated ginger. Stir until sugar dissolves. Bring to a simmer and let it cook for about 5 minutes.

      Thicken the Sauce: Reduce heat and whisk in the cornstarch mixture. Continue to cook for another 2-3 minutes until the sauce thickens to your desired consistency. Remove from heat and set aside.

        Cook the Chicken: In a large skillet over medium-high heat, add a tablespoon of oil. Once hot, add the chicken thighs. Cook for about 5-7 minutes on each side until fully cooked and golden brown. Remove from the skillet and let rest for a few minutes before slicing into bite-sized pieces.

          Stir-Fry the Vegetables: In the same skillet, add the broccoli florets and red bell pepper slices. Stir-fry for about 4-5 minutes until they are tender but still crisp.

            Combine the Chicken and Sauce: Return the sliced chicken to the skillet with the vegetables and pour the teriyaki sauce over everything. Toss to coat evenly and heat through for another 2 minutes.

              Assemble the Rice Bowl: In individual serving bowls, place a scoop of jasmine rice. Top with the teriyaki chicken and vegetable mixture.
