Ingredients

1 cup all-purpose flour

1/4 cup unsweetened cocoa powder

2 tablespoons granulated sugar

1 tablespoon baking powder

1/2 teaspoon salt

1 cup milk (or any non-dairy alternative)

1 large egg

2 tablespoons melted butter (or coconut oil for a dairy-free option)

1 teaspoon vanilla extract

1/2 cup chocolate chips (semi-sweet or your preference)

Optional: powdered sugar, maple syrup, or whipped cream for serving

Instructions

In a large mixing bowl, whisk together the flour, cocoa powder, sugar, baking powder, and salt until well combined.

In another bowl, mix the milk, egg, melted butter, and vanilla extract until fully blended.

Pour the wet ingredients into the dry ingredients, and gently stir until just combined. Be careful not to overmix; small lumps are okay.

Fold in the chocolate chips until evenly distributed throughout the batter.

Preheat a non-stick skillet or griddle over medium heat. Lightly grease with cooking spray or butter.

Pour approximately 1/4 cup of batter onto the skillet for each pancake. Cook for about 2-3 minutes or until bubbles form on the surface and the edges look set.

Flip the pancake, and cook for an additional 1-2 minutes until the other side is golden brown. Repeat with the remaining batter.

Serve the pancakes warm, dusted with powdered sugar, drizzled with maple syrup, or topped with whipped cream and extra chocolate chips if desired.

Prep Time: 10 mins | Total Time: 20 mins | Servings: 4 (makes about 8 pancakes)
