Traditional Egyptian Koshari

Experience the vibrant flavors of Egypt with this delicious Koshari recipe! Combining lentils, rice, and macaroni, this comforting dish is layered with a spiced tomato sauce and topped with crispy fried onions. Ingredients
  

1 cup lentils (brown or black)

1 cup rice (preferably medium-grain)

1 cup small macaroni

1 large onion (thinly sliced)

2 cloves garlic (minced)

1 teaspoon ground cumin

1 teaspoon ground coriander

1/2 teaspoon paprika

1/2 teaspoon cayenne pepper (adjust for spice level)

2 cups tomato sauce (homemade or store-bought)

1 tablespoon vinegar (white or red)

3 tablespoons vegetable oil (for frying)

Salt and pepper to taste

Fresh parsley (chopped, for garnish)

Crispy fried onions (for topping, optional)

Lemon wedges (for serving)

Instructions
 

Cook the Lentils: Rinse the lentils under cold water. In a medium pot, add lentils and water (cover to about 2 inches). Bring to a boil, then reduce heat and simmer until tender, about 15-20 minutes. Drain and set aside.

    Prepare the Rice: In a separate pot, bring 2 cups of water to a boil. Add the rice, a pinch of salt, reduce heat, cover, and cook until the rice is tender and water is absorbed, approximately 15 minutes. Fluff and set aside.

      Cook the Macaroni: In the same pot used for the rice, boil water again, add macaroni, and cook until al dente, about 7-8 minutes. Drain and set aside.

        Fry the Onions: In a large skillet, heat 3 tablespoons of vegetable oil over medium heat. Add the sliced onions and fry until golden brown and crispy, about 10-15 minutes. Remove the onions, draining them on paper towels.

          Prepare the Tomato Sauce: In the same skillet, add the minced garlic and sauté for a minute. Then, add the tomato sauce, cumin, coriander, paprika, cayenne pepper, and vinegar. Season with salt and pepper. Simmer for about 10 minutes until slightly thickened.

            Assemble the Koshari: In a large serving dish, layer the lentils, followed by the rice, and then macaroni. Pour the tomato sauce over the layers evenly.

              Garnish and Serve: Top with fried onions and sprinkle chopped parsley over the dish. Serve hot with lemon wedges on the side for squeezing over the Koshari.
