Ingredients

1 lb ground beef

1 cup mashed potatoes (prepared and cooled)

1 cup shredded cheddar cheese

1/2 cup cooked bacon, crumbled

1/2 cup finely chopped green onions

1/2 cup breadcrumbs

1 large egg

2 tablespoons Worcestershire sauce

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon salt

1/2 teaspoon black pepper

1/2 cup barbecue sauce (for glazing)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C).

Prepare the Mixture: In a large bowl, combine the ground beef, cooled mashed potatoes, cheddar cheese, crumbled bacon, green onions, breadcrumbs, egg, Worcestershire sauce, garlic powder, onion powder, salt, and black pepper.

Mix Thoroughly: Use your hands or a spoon to mix the ingredients until well combined, but avoid overmixing to keep the meatloaf tender.

Shape the Loaf: Transfer the mixture to a loaf pan or shape it into a loaf on a lined baking sheet. Smooth the top to create an even surface.

Glaze the Meatloaf: Spread the barbecue sauce evenly over the top of the meatloaf, ensuring that it’s fully coated.

Bake: Place the meatloaf in the preheated oven and bake for 1 hour, or until the internal temperature reaches 160°F (70°C).

Rest and Serve: Remove from the oven and let it rest for about 10 minutes before slicing. This resting period allows the juices to redistribute, making for a moister meatloaf.

Garnish (Optional): Garnish with additional crumbled bacon and green onions for added flavor and presentation.
